Our chilli lime and cracked pepper biltong is a popular biltong with the meat sourced from the fertile slopes of Australian grazing lands, we trim the meat of its excess fat, we make a selection of herbs and spices with a background taste of lime present.
As we rub all ingredients in and massaging the meat we than marinate it for 48 hours allowing the spices and flavour to infuse into the meat. After drying for a few days we thinly slice it to bite size pieces for all enjoyment at any time.
